General Information:

Curry powder is a spice mix of widely varying compositions based on South Asian cuisine. Most curry powder recipes include curry leaf, coriander, turmeric, cumin, fenugreek, and chili peppers in their blends. Depending on the recipe, additional ingredients such as ginger, garlic, asafetida, fennel seed, caraway, cinnamon, clove, mustard seed, green cardamom, black cardamom, nutmeg, white turmeric, long pepper, and black pepper may also be included and can be bought in mild, medium or hot strengths. Yellow curry powder (developed by the British during the time of their colonial rule in India) is a blend of many different Indian spices, one of which is sometimes (but not always) curry leaf. “Curry” is identified with Indian food and “curry powder” is believed to be the key flavoring ingredient. This is not correct as all Indian food doesn't contain a specific "curry powder". The seasoning is a blend of spices better known in India as “garam masala”.

No matter where you find curry, you are sure to get a taste of regional influences since no two curries are likely to be the same.
